Kofte ras el asfoor- Minced meat, with ground rice
Kofte ras el asfoor ingredients:
- I kg. beef
- 2 onions
- 1/2 cup ground rice
- 2 cups tomato juice
- 1 teaspoon vinegar
- 1 teaspoon sugar
- cooking oil
- salt and pepper
Kofte ras el asfoor preperation:
Mince beef and one onion twice. Add ground rice and seasoning and knead thoroughly. With wet hands, shape into small round balls (Ras el Asfoor means “head of sparrow”, denoting size of meat ball).
Fry and then remove onto absorbent paper. Chop second onion very fine and fry in the same oil. Dissolve vinegar and sugar in tomato juice and pour over fried onions and cook for 10-15 minutes.
Return meat balls to pot and cook for 10 minutes longer, gently shaking pot to prevent meat balls from sticking to bottom.
